Mimosa combines three key words: nature, pleasure and sun. For Chef Jean-François Piège, “Mimosa is an ode to the Riviera, to France, to its exceptional products, to its heritage and to its identity. And for that, nothing artificial, complicated or overwhelming! Very quickly, the idea of a table du soleil, celebrating Mediterranean cuisine, was adopted, a genre that I love but that I had not yet had the opportunity to practice.”
